Gran's Zucchini and Poppyseed Muffins

    Makes: 12 muffins

    • 1 cup wholemeal self-raising flour
    • 1 cup plain self-raising flour
    • 1/2 cup bran
    • 1/2 teaspoon bicarb soda
    • 3/4 cup buttermilk
    • 1/3 cup orange juice concentrate
    • 2 eggs
    • 1 cup grated zucchini
    • 2 tablespoons poppyseeds

    Preparation:5min  ›  Cook:25min  ›  Ready in:30min 

    1. Sift the dry ingredients into a bowl. Add poppyseeds to the zucchini and mix into the dry ingredients.
    2. Beat together egg, buttermilk and orange juice and pour into the mixture all at once. Mix till well combined but do not overmix.
    3. Spoon into greased muffin pans and bake at 180C for 20-25 minutes or until cooked (test with skewer)
