This recipe is from a girl I met at Mothers Group who brought the muffins along to morning tea. My taste buds were struck down that day and I begged her for the recipe. The combination of bananas and chocolate in a muffin is a perfect match!. They freeze well and I often include them in my kids lunch box as they defrost in 20 minutes. Depending on the size of the bananas, you may get more than 12 muffins - but thats never a bad thing.
Disastrous. followed instructions, however butter was all lumpy and so put it through blender but then ruined egg. Recipe is badly written. will b more careful as to follow writers recipes from now on. they should have written something like soften butter first before adding remaining wet ingredients. Loved them! I wanted to make them a little healthier, so I used 1 cup of S.R flour and 1 of whole meal flour (only realised once I had cominded the 2 that my wholemeal was Plain flour, so I added 2 tsp of baking powder as well) Also used Raw sugar - a little less than recommended and light milk.. I had Caramel choc chips in the pantry so I threw them in.. They made 15 delicious moist cup cakes.. The 2 1/2 yr old loved them!! - 30 Nov 2012
