Ingredients

- 1kg mixed fruit
- 250g mixed cherries
- 125g butter
- 3/4 cup brown sugar
- 1tsp mixed spice
- 1/2cup brandy or rum
- 1/2cup orange juice
- 2 tablespoons marmalade
- 1cup plain four
- 1cup SR flour
- 2 large eggs

- Preheat the oven to 160 degrees C
- Line the base of a 20 cm cake tin with 2 layers of newspaper and line the bottom and sides with baking paper. The paper should come up higher than the top of the tin.
- Put fruit, butter, spice, sugar, liquid and marmalade into a large pan and heat till boiling. Simmer for 3 minutes.
- Cool completely
- Add eggs and flours fold into the mixture.
- Pour into the prepared tin. Bake in preheated oven for 2 hours.
