Double Chocolate Pavlova

    This is a great summer dessert. Simple to make with very basic ingredients. Perfect dessert for dinner parties too.

    Serves: 8 

    • 4 large eggs
    • 1 1/2 cups of icing sugar
    • 1/2 cup of ground almonds
    • 400g milk chocolate (I use Cadburys)
    • 2 teaspoons of instant coffee
    • 1/2 cup cream
    • 1/2 cup cream (to whip for assembly)
    • strawberries/cherries to decorate

    Preparation:35min  ›  Cook:25min  ›  Ready in:1hour 

    1. To make the meringue: Separate the eggs, use only the egg whites and mix with icing sugar. Beat together until fluffy with electric beater.
    2. Fold the ground almonds into the mixture.
    3. Spread on baking tray and divide into 3 circles the same size. (This is to make the meringue layers.)
    4. Bake in the oven for 25 minutes at 125 degrees.
    5. To make chocolate fillings: Melt the chocolate, 1/2 cup of cream and the instant coffee in a pot on low heat and cook very slowly until they thicken.
    6. To layer and decorate: Beat 1/2 cup cream with the electric beater until thick.
    7. Put the 1st meringue circle at the base, spread the cream follow by the chocolate mix on top.
    8. Repeat the process by putting the 2nd meringue circle on top, spread the cream and chocolate mix on top again.
    9. Put the last meringue circle at the top, layer with the last cream and chocolate mix.
    10. Add handful of cherries/strawberries around to decorate.
    11. YUM!!!

    I found this recipe somewhat frustrating! My meringue was flat as pancakes and stuck to the baking paper...I also found it easier to spread the chocolate mix first and then the cream. BUT, beware, let the chocolate mixture cool down first. I felt I needed a little more detail (like how long to beat meringue for and how big to make rounds based on mixture quantity). I have also made it the night before I needed it so not sure how that's going to go!!!  -  10 Apr 2010


    Altered ingredient amounts. I did not find 1/2 cup of cream enough to put in across 3 layers. I probably ended up using closer to 300ml.  -  10 Apr 2010
