Sylvia's Brandy Custard

    Serves: 6 

    • 2 teaspoons custard powder
    • 2 tablespoons sugar
    • 1 egg, separated
    • 300ml milk
    • 1 tablespoon brandy

    1. In a small basin blend custard powder, sugar and egg-yolk with a little milk. Place remaining milk in saucepan, bring to boil. Gradually stir in blended custard powder, return to heat, boil 2 minutes, stirring constantly; cool slightly. Whip egg-white until stiff, lightly fold into cooled custard mixture with brandy.
