Gingerbread Ice Cream

This recipe would go great with the plum pudding on Christmas day!

Serves: 12 

  • 2 litres of good quality vanilla ice cream
  • 1 small packet of ginger biscuits, crushed
  • 1 tablespoon mixed spice - or add in equal amounts ground nutmeg and cinnamon. Add more if you would like the taste to be stronger

Preparation:5min  ›  Cook:8hours  ›  Ready in:8hours5min 

  1. Let the ice cream soften at room temperature then place in a mixing bowl.
  2. Crush the ginger biscuits and add to the ice cream, also add the spices.
  3. Mix together until well blended. You may need to add more spices to make it stronger.
  4. Return ice cream to tub and freeze overnight to let the flavours develop.
  5. Serve with plum pudding or Christmas cake.
