    Is it a drink or is it dessert? A simple recipe but this special occasion fruit salad is a treat served after a rich meal.

    Serves: 6 

    • 2 fresh mangoes, stones and peel removed and diced
    • 300g raspberries
    • 1/2 pineapple, cut into chunks
    • 1 bottle champagne
    • a little crème de cassis (blackcurrant liqueur)

    1. Place prepared fruit into separate bowls or glasses. Top up each bowl/glass with champagne, then a 1/2 nip of crème de cassis. Serve immediately.


    Substitute other fruit for the raspberries if they are hard to find. You can use any fruit liqueur or even Ribena if you don't have creme de cassis.
