Brazilian Christmas Cake

    This cake is traditionally served on Christmas Eve in Brazil and it's always a hit. Packed with nuts and fruit.

    Serves: 15 

    • 3 eggs, yolks and whites separated
    • 3 cups (660g) sugar
    • 150g unsalted butter
    • 3 cups (375g) plain flour
    • 1 tablespoon of baking powder
    • 1 1/2 cups (375ml) milk
    • 100g chopped walnuts
    • 50g hazelnuts
    • 50g almonds
    • 50g raisins
    • 50g apricots
    • 100g mixed peel
    • For the Icing
    • 1 egg white
    • 300g icing sugar
    • 1 tablespoon of lime juice
    • mint leaves, glace cherries and walnuts for decoration

    1. Beat the egg whites till they form stiff peaks.
    2. Beat butter and sugar until creamy and pale, then add the yolks and continue beating.
    3. Slowly add the flour, baking powder and milk. Fold in the egg whites, the nuts and fruits.
    4. Pour batter into a buttered and floured 25cm cake tin or ring tin and bake it on a medium oven 180 degrees C until done – about 30 minutes. Check with a skewer to see if its done. Let cool slightly then remove to a cake rack to cool completely.
    5. To make the icing, beat the egg white with a tablespoon of the icing sugar. When it’s creamy, slowly add the lime juice and the remaining sugar.
    6. Pour the icing over the cooled cake and decorate with nuts, cherries and mint leaves.
