A sweet muesli with fibre, nutritious, high-protein vegetarian breakfast.
1 cup rolled oats
1/2 cup oat bran
1/4 cup wheat germ
1/4 cup mixed nuts, chopped
1/4 cup mixed dried fruit (e.g. dried apricots, raisins)
1/2 cup fruit juice or milk.
a small green apple, grated
fresh fruit, diced (stonefruit, mango, whatever's seasonal
1/4 cup natural yogurt
- Just cover oats and dried fruit with fruit juice in a bowl for at least 2 hours (or overnight)
- Toss pounded nuts, diced fruit, grated apple and yogurt into bowl and mix well. Add a little more juice to get the right consistency. Sweeten with honey.
