Chilli Garlic Prawns

Sauce part can be made ahead. Prawns can be substituted for crab if you like. Frozen raw unpeeled prawns are quick, easy and convenient for this recipe.

Serves: 4 

  • 4 tablespoons olive oil
  • 1 onion, finely chopped
  • 6 cloves garlic, crushed
  • 2-4 hot red chillies, sliced
  • 1 tablespoon tomato paste
  • 1/2 cup white wine
  • 1 can crushed tomatoes
  • 1 teaspoon sugar
  • salt/pepper
  • 1 kg fresh raw king prawns
  • 1/2 cup breadcrumbs
  • 1 bunch continental parsley, finely chopped

  1. Heat oil in a large pot that has a lid.
  2. Add onion, garlic and chillies; saute until onion is transparent.
  3. Add tomato paste and cook for 1 minute.
  4. Add wine, bring to the boil and allow to reduce slightly.
  5. Add crushed tomatoes, sugar and seasonings; simmer 5-10 minutes. (Sauce can place in fridge at this stage until required)
  6. Add prawns, breadcrumbs and 3/4 of the parsley; mix well.
  7. Cook with lid on until prawns are all golden-red in colour.
  8. Garnish with remaining chopped parsley and serve.
