Frosting for Xmas cake

    This is a very old icing recipe from America. About 50 years ago I got this and it is still the best loved and used in my family to this day. Easy but great.

    Serves: 30 

    • 500g caster sugar
    • 2 egg whites
    • 150mls water

    Preparation:30min  ›  Cook:15min  ›  Ready in:45min 

    1. Gently heat the sugar and water until dissolved then boil rapidly till a drop of syrup dropped into a glass of cold water forms a soft ball.
    2. Let cool.
    3. Beat egg whites till stiff, then pour cooled syrup over egg whites beating all the time.
    4. Continue beating till thick and fluffy.
    5. Spread over your Xmas cake.
    6. Tap gently with a knife to form peaks and then allow to set.
