Easy peazy christmas cake

    This is a delicious Christmas fruit cake that you can make on any budget and even those fussy kids will enjoy it, this has been passed through my family and it is always a hit. you can ice it or leave it as it is.

    Serves: 10 

    • 1 kg mixed fruit
    • 1¾ cup orange juice
    • ¼ cup brandy
    • 1 tsp almond essence
    • 1 tsp rum essence
    • 2 cups of flour
    • 2 Tsp baking powder
    • icing (optional)
    • 90g butter, softened
    • 1½ cups sifted icing sugar
    • 2 Tbs orange juice
    • ½ tsp fine orange zest

    Preparation:12hours  ›  Cook:2hours  ›  Ready in:14hours 

    1. Mix all liquid together.
    2. Put fruit in bowl, add the liquid, put in fridge and leave to soak overnight.
    3. Next day, preheat oven to 150 degrees C.
    4. Add the flour and baking powder.
    5. Mix all together untill combined, do not over mix the mixture.
    6. Pour into oven proof dish, bake at 150 celicus for 1¾ - 2 hours

    This really was easy! I changed the recipe a little to suit the ingredients I had on hand. I only had 1 1/2 cups of orange juice and no rum essence, so I used the orange juice and added 1/4 cup of rum, as well as the brandy and almond essence. I took the advice of one of the reviewers and added spice. 1 tsp ground nutmeg, 1 tsp cinnamon and 1 tsp mixed spice. I soaked the fruit for 2 days. It was delicious, and well recieved by the relatives!  -  28 Dec 2011


    a wonderfully easy christmas cake to prepare. Tastes great for a cake that has little time or effort into making it!!! would suggest though perhaps adding some nutmeg and cinnamon to add that extra christmas taste/feel to it, but big thumbs up from this family!!  -  11 Nov 2010
