    Persillade, a wonderfully scented combination of chopped parsley and garlic, contributes a classic French flavouring to this fruity side dish of fried zucchini, tomato, onion and apple.

    Ingredients
    Serves: 4 

    • 1 red or white onion
    • 3 tablespoons olive oil
    • 1 medium apple
    • 1 medium tomato
    • 500g small zucchini
    • salt and black pepper
    • a medium bunch of parsley
    • 1 clove garlic

    Directions

    1. Peel and thinly slice the onion. Heat 2 tablespoons oil in a frying pan, add the onion and cook over low heat for 7–8 minutes, until the onion has softened.
    2. Core the apple, chop into cubes, then cube the tomato. When the onion is soft, stir in the apple and tomato and cook over low heat for 5 minutes, stirring occasionally.
    3. Trim the zucchini, slice into thin strips, then cut the strips into 5-cm batons. Sprinkle with salt and toss well. Heat the remaining oil in another frying pan and fry the zucchini strips over moderate heat until they release their moisture. Increase the heat and cooking until the liquid has evaporated, shaking the pan to make sure the zucchini does not burn.
    4. Reduce the heat, then add the apple, tomato and onion mixture and simmer for 5–6 minutes.
    5. While the mixture is simmering, chop enough parsley to give 4 tablespoons, then peel and crush the garlic and mix with the parsley to make the persillade.
    6. Stir the persillade into the frying pan with the vegetables. Simmer for a few minutes to cook the garlic, then grind in some black pepper and add more salt if necessary. Serve the vegetables immediately.

    SERVING SUGGESTION

    This is a wonderful dish to serve with pan-fried or grilled pork chops or steaks.

    VARIATION

    This vegetable dish can be turned into a light main course by stirring 250 g chopped cooked ham into the mixture and heating gentle until just warmed through, before adding the persillade.
