Stir-fried cabbage and cashews

    White and green cabbage combine in this easy stir-fry, while cashew nuts and celery add extra crunch.

    Serves: 4 

    • 350g white cabbage
    • 350g green cabbage
    • 2 cloves garlic
    • 2cm piece fresh root ginger
    • 2 stalks celery
    • 4 spring onions
    • 2 tablespoons sesame oil
    • 1/3 cup (60g) unsalted cashew nuts
    • To serve: light soy sauce

    1. Trim and shred the cabbages. Peel and chop the garlic, peel and grate the ginger, and trim and slice the celery and spring onions.
    2. Heat the sesame oil in a large frying pan and fry the cashew nuts for 30 seconds, until just beginning to turn brown.
    3. Add the garlic, ginger, celery and spring onions; cook for 30 seconds, being careful not to burn the garlic.
    4. Add the shredded cabbage; stir-fry for 3–5 minutes, until just softened but not wilted.
    5. Serve sprinkled with soy sauce.


    This vegetable dish can accompany plainly grilled pork chops; it also teams well as part of an Asian meal.
