When there's no time to make pizza dough, try these zesty little alternatives made with pita bread topped with chilli and tomato sauce, three different cheeses and a mixture of tasty vegetables.

Serves: 2 

  • oil for greasing
  • 2 wholemeal pita breads
  • 2 tablespoons tomato sauce
  • 1/2 teaspoon Tabasco sauce
  • 50g mozzarella cheese
  • 50g mature Cheddar cheese
  • 50g Taleggio or Fontina cheese
  • 1 medium red onion
  • 2 medium tomatoes
  • 1/2 large red or green capsicum
  • 1 clove garlic
  • 1 tablespoon olive oil
  • 4 black olives
  • a few sprigs of basil
  • a few sprigs of marjoram
  • 1/4 cup grated Parmesan cheese

  1. Preheat the oven to 190 degrees C. Lightly grease a baking tray and split the pita breads in half.
  2. Mix the tomato sauce with the Tabasco sauce. Spread on each pita half and arrange on the baking tray.
  3. Grate the mozzarella and the Cheddar cheeses together and sprinkle over the pitas.
  4. Thinly slice or dice the Taleggio or Fontina cheese and spread over the grated cheese.
  5. Peel the onion and cut into thin wedges. Slice the tomatoes and finely chop the half capsicum. Arrange the onion and tomato over the cheese; scatter with capsicum.
  6. Peel and crush the garlic, mix with the olive oil and drizzle over the pizzas. Place an olive in the centre of each and bake on the top shelf of the oven for 10 minutes.
  7. Meanwhile, strip off the basil and marjoram leaves and put into a bowl. Mix in the Parmesan.
  8. Remove the pizzas from the oven, sprinkle with the herb and Parmesan mixture, and serve hot.
