Ginger and chocolate mascarpone

A wickedly rich confection of dark chocolate, rum and creamy Italian cheese, studded with ginger.

Serves: 4 

  • 3 pieces ginger in syrup
  • 2 tablespoons ginger syrup from the jar
  • 2 tablespoons dark rum
  • 100g dark chocolate
  • 250g mascarpone cheese
  • To serve: 4 brandy-snap baskets (optional)

  1. Finely slice 1 piece ginger and put aside. Dice the remaining ginger finely and put into a bowl with the ginger syrup and the rum. Grate in the chocolate and stir to combine.
  2. Add the mascarpone, mix well, then cover and chill for as long as you can. It will stiffen as it chills.
  3. Scoop the mixture into the brandy-snap baskets, top with the reserved sliced ginger, and serve.


Try brandy, sweet sherry or coffee liqueur as a substitute for the rum.
