EASY! Egg and Fat Free Bran and Fruit Loaf

    2 hours 30 minutes

Easy moist and tasty (healthy!) loaf, with no eggs or fat.

    7 people made this

    Serves: 10

    • 1 cup sultanas
    • 1 cup chopped dates
    • 1½ cups low fat milk
    • ½ cup orange juice
    • 2 Tbsp sugar
    • 1 cup All Bran
    • 1½ cups self raising flour
    • ½ cup wholemeal plain flour
    • 1 tsp mixed spice

    Preparation:40min  ›  Cook:1hour  ›  Extra time:50min  ›  Ready in:2hours30min

    1. Combine the first group of ingredients - fruit, sugar, liquids, All Bran - in a bowl and allow to stand for half an hour.
    2. Stir sifted flours/spice into fruit and liquid mix, pour into a lined loaf tin and bake at 180C for about 1hr 15mins (fan forced).
    3. Check the loaf regularly, if it is becoming too brown and not cooking in the centre, cover it loosely with foil and return to bake.
    4. Half cool in tin, then turn onto cake rack to cool. Serve sliced with butter or honey, heated up or not, or just by itself for a tasty, healthy snack for those with a sweet tooth!
    5. Best kept in the fridge in hot or humid weather, as the fruit tends to make it go mouldy easily.

Looking for a fruit cake recipe low in sugar as my daghter has recently been diagnosed with type 1 diabetes, so i tried this and it was amazing. I did have to tweak it to use items i had in my cupboard, eg oat bran instead of all bran and i threw in dried apricots, lowering the amount of sultanas. So it is well worth giving it a go.  -  17 Sep 2016  (Review from Allrecipes UK & Ireland)
