Watermelon Lime Fizz

    I love watermelon in the summer, it is the perfect snack for a hot, sunny day. I was inspired to make my favourite summer snack into a cocktail. This sweet, fresh, pink hued champagne cocktail is not too alcoholic and great to serve at a barbie. It's best if you can chill the watermelon overnight.

    Serves: 6 

    • 900g watermelon
    • 250ml of sparkling white wine or champagne
    • 2 tablespoons lime juice
    • 1 teaspoon lime rind, finely grated
    • 2 tablespoons of mint to garnish
    • sugar syrup to taste

    Preparation:10min  ›  Ready in:10min 

    1. Chill watermelon overnight in the fridge.
    2. Place watermelon, sparkling wine, lime juice and rind and process in the blender until smooth.
    3. Add cooled sugar syrup to taste (to make sugar syrup - 2 parts sugar and 1 part water. Bring water to the boil in a saucepan and add sugar. Remove from heat once sugar is melted, cool and bottle).
    4. Pour into long glasses or martini glasses and serve immediately, garnished with mint springs.

    Altered ingredient amounts. i actually didn't use sugar syrup b/c my watermelon was already quite sweet. however, i could see how if your watermelon wasn't very ripe or flavourful how it might need just a touch of syrup.  -  21 Aug 2009  (Review from Allrecipes UK & Ireland)
