    This brown rice salad recipe is made every Christmas without fail. It is a favourite of every member of the family, and whenever we have guests, they remark on the flavour of this beautiful colourful brown rice salad as well. Goes great with a bbq, other crisp leaf salads, cold meat, just about everything, use as a side dish or as a main with other salads and meat. The green and red capsicum and the black raisins make it a very colourful salad.

    Ingredients
    Serves: 10 

    • 1 1/2 cups brown rice
    • salt to taste
    • 3 spring onions, finely chopped
    • 1 red capsicum, cored, seeded and chopped
    • 1 green capsicum, cored, seeded and chopped
    • 3/4 cup raisins
    • 75g cashews, raw or roasted and roughly chopped
    • 2 tablespoons chopped parsley
    • 3 tablespoon of soy sauce dressing (or to taste)
    • Soy Sauce Dressing
    • 1/2 cup cooking oil
    • 2 tablespoons soy sauce
    • 1 tablespoon lemon juice
    • 2 level teaspoons sugar
    • 1 clove garlic crushed or finely chopped
    • 1cm root ginger finely chopped
    • salt and pepper to taste

    Directions
    Preparation:10min  ›  Extra time:50min  ›  Ready in:1hour 

    1. To make the soy sauce dressing, put all sauce ingredients into a jar with a lid and shake well to blend.
    2. Cook rice in boiling salted water for 40-45 minutes until soft. Rinse, drain well and cool.
    3. Place in a bowl and add remaining ingredients.
    4. Toss thoroughly before serving.
    5. 10 minutes before going to serve, add the soy sauce dressing to the rice and veg and toss well, then serve.

    Used different ingredients. Did not include ginger, or green capsicum. Used dried currants instead of raisins (they are smaller and spread more evenly without needing to cut them up), and finally replaced the nuts with toasted pepitas and sunflower seeds (these are lower cost, achieve the same nutty crunch) - 06 Nov 2010

    Loved this recipe, didn't have brown rice just used jasmine rice and it was absolutely delish. Served for A Christmas BBQ and the guest loved it so much I gave them the recipe. I have also used the dressing in a tossed salad and that was yummy also. I am going to use the dressing tonight to marinate some chicken wings as I feel this will be yummy also - 06 Jan 2012
