Super easy risotto

    This is my son's favourite. Great to freeze and transport back to uni to keep him alive until the next visit.

    Serves: 4 

    • 300gms arborio rice
    • 1 onion, chopped
    • 2 stalks celery, chopped
    • 1/2 green capsicum, chopped
    • 1/2 cup frozen peas
    • 3 rashers bacon, chopped
    • 1 litre chicken stock
    • 1/2 cup parmesan cheese, grated
    • oil for frying
    • salt and pepper to taste

    Preparation:5min  ›  Cook:20min  ›  Ready in:25min 

    1. Fry onion until soft.
    2. Add bacon, capsicum and celery and fry until bacon is crispy.
    3. Add rice and stir for 1 minute.
    4. Add stock and stir to mix. Simmer for approx 20 mins, stirring occasionally.
    5. When rice is creamy, turn off heat and add peas.
    6. Stand for a few minutes and serve sprinkled with cheese.
    7. I add chilli and bbq chicken sometimes with a squeeze of lemon juice.

    This wasn't bad. It was very easy to make, but not much in the way of flavour. I added chicken and cheese and found it quite nice. It's not something I would make for other people, but if I'm home alone and want something easy to make, I might make this again. Definitely not without the chicken and cheese though, without them I don't think it's nice at all.  -  10 Oct 2010
