An easy kid-friendly treat for lunch boxes or a sweet afternoon snack. Made with coconut and cocoa this no bake recipe is a must. Try and keep the kids from licking their fingers when they make these. This was my mothers recipe.

Foxglove Victoria, Australia

Serves: 4

  • 1 tin (395g) condensed milk
  • 1 packet (250g) of plain Marie biscuits (or other plain sweet biscuits)
  • 1 250g packet of dessicated coconut
  • 2 tablespoons cocoa powder

Preparation:5min  ›  Extra time:10min  ›  Ready in:15min

  1. Pour biscuits into a zip lock bag and crust with a rolling pin until they are small chunks. (Dont worry if some of them get crushed into fine crumbs). Put crushed biscuits into a mixing bowl with the cocoa powder and about 1/3 to 1/2 the packet of the coconut. Mix dry ingredients. Pour extra coconut into a separate bowl.
  2. Pour whole tin of condensed milk over the biscuit mixture and mix with a metal spoon until mix is combined. Take dessert spoonfuls and roll into balls with your hands and then roll in remaining coconut. Place on a tray and put in fridge until the set firm.

These are so yummy. I made them for little treats and made them into little christmas puddings with white chocolate melted on the top. I cut spearment leaves and raspberry lollies and added them to the top to make them look like a piece of holly and a red berry. They were very popular. - 01 Jan 2011
