I have used this recipe for years. These biscuits are a great standby when you need something to put in the lunchbox for playlunch. Easy to make too and children love them. Such an easy recipe's a good one to have the children help you make. Teach them to measure at the same time!

Serves: 12 

  • 1½ cups of S.R Flour
  • 125g butter
  • 1 egg
  • 1 cup brown sugar
  • 1 tsp vanilla
  • 2 tablespoons cocoa
  • 2 cups rice bubbles
  • 1 cup sultanas (or dates; or chopped dried apricots)

Preparation:15min  ›  Cook:10min  ›  Extra time:5min  ›  Ready in:30min 

  1. Combine everything except the fruit and rice bubbles.
  2. Beat until the butter is creamed.
  3. Fold in the fruit along with the rice bubbles.
  4. Drop dessertspoons of mixture onto a tray lined with baking paper.
  5. Bake for about 10 minutes in 180 degree oven.
  6. These biscuits can be iced ...look nice with chocolate icing!
