Best Biscuit Mix for Busy Mums

    This easy biscuit mixture will keep in the fridge for up to 10 days. It makes eight cups, and I use it in two cup lots to make different flavoured biscuits as required. Each flavour variation at the end of the recipe is enough to add to two cups of the mixture. Two cups makes 24 biscuits.

    Makes: 96 vanilla biscuits

    • 4 cups (600g) plain flour
    • 3 teaspoons baking powder
    • 1/2 teaspoon baking soda
    • 1 teaspoon salt
    • 1 teaspoon ground cinnamon
    • 1/2 cup (50g) skim milk powder
    • 2 cups (440g) brown sugar
    • 250g butter, chopped

    Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

    1. Sift dry ingredients into a large bowl. Stir in brown sugar. Rub in butter until mixture resembles breadcrumbs.
    2. Store in a sealed container in the fridge until required.
    3. Preheat oven to 200 degrees C. Grease three baking trays.
    4. To make biscuits, mix together 2 cups of the biscuit mixture with 1/4 cup cold water and flavour variation of choice (see note at end of recipe).
    5. Drop heaped teaspoons of mixture onto prepared tray, slightly and flatten with a fork. Bake for 10-12 minutes or until golden. Cool on trays.

    Orange biscuits:

    Replace water with orange juice.

    Choc chip biscuits:

    Increase cold water to 1/3 cup. Add 1/2 cup choc chips and 1/2 cup chopped nuts.

    Banana and nut biscuits:

    Replace water with 1 tablespoon milk. Add 1 mashed banana and 1 cup chopped peanuts.

    I love these biscuits! so versatile and having the mixture ready in the fridge means they can be ready in no time at all. I make the mixture at the weekend and then make biscuits throughout the week.  -  19 Jul 2010


    The hardest thing about this recipe is deciding what to add to the biscuit base, because the choice is endless. We usually do the chopped nuts and choc chips. We can have fresh biscuits ready within 15 min (prep and cooking) if visitors arrive and we have nothing to serve them.  -  10 Nov 2012


    these are good and enjoyed by the family. I love that by rubbing the butter in, all they need is some liquid - no creaming required! yah. great for whipping up quickly. I made choc chip with orange zest! super good. Next time I will blast it in the food processor rather than rub in the butter  -  16 Sep 2012
