    Basil and sun-dried tomato add flavor and zing to this simple yet delicious pasta salad recipe. It's perfect for picnics, potlucks, bring a plates and great served warm or cold. You may want to add a clove of minced garlic as well.

    Serves: 8 

    • 2 cups uncooked risoni pasta
    • 1/2 cup chopped fresh basil leaves
    • 1/3 cup chopped oil-packed sun-dried tomatoes
    • 2 tablespoons olive oil
    • 3/4 cup grated Parmesan cheese
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground black pepper

    1. Bring a large pot of lightly salted water to a boil. Add the risoni and cook for 8 to 10 minutes or until al dente. Drain and set aside.
    2. Place basil leaves and sun-dried tomatoes in a food processor. Pulse 4 or 5 times until blended.
    3. In a large bowl, toss together the risoni, basil-tomato mixture, olive oil, Parmesan cheese, salt and pepper. Serve warm or cold.

    Enjoyable salad. Would probably add another element like baby spinach or asparagus next time and garlic would have been a great addition. - 08 Nov 2013

    Used different ingredients. Try adding 1 red onion (chopped and processed with the sundried tomato and basil). At the end add 1/2 cup black olives for a fuller flavour. - 30 Dec 2009
