Double Chocolate Macadamia Brownie

It's chocolatey and nutty, moist and morish!

Serves: 16 

  • 200g quality dark chocolate bar (broken into pieces)
  • 250g butter chopped
  • 1 3/4 cups brown sugar
  • 4 eggs
  • 1/3 cup cocoa powder sifted
  • 1¼ cups plain flour, sifted
  • ¼ teaspoon baking powder
  • 125g quality dark chocolate bar (broken into pieces
  • 1 packet macadamia nuts, halved (about 50g)

  1. Preheat oven to 160 degrees. Place chocolate bar pieces and butter in a saucepan over low heat and stir until smooth. Allow to cool slightly.
  2. Place sugar, eggs, cocoa, flour and baking powder in a bowl. Add the melted chocolate mixture, whole chocolate pieces, macadamias and combine. Do not overwork the mixture as it can make the brownies tough.
  3. Pour mixture into a 20cm (8 in) square slice tin lined with non stick baking paper cut in two pieces.
  4. Bake for 50 minutes or until set. If checking with a skewer, the chocolate melted through will be gooey, but the slice is cooked.
  5. Cut into slices in tin.
  6. Serve warm with double cream or great cold! Enjoy!
