This recipe is just a basic cup-cake or muffin recipe. It can be adapted to by adding extra ingredients as you desire. I have used vanilla essence and sultanas; I've sprinkled flaked almonds and brown sugar over the top. You can use anything - orange juice, choc-chips, glace cherries or pineapples, dried chopped apricots, rum essence. If you want to ice them, try this recipe.

    Serves: 12

    • 125g sugar
    • 125g butter
    • 250g flour
    • 2 - 4 tablespoons milk (as necessary)
    • 1 or 2 eggs (I used 2)

    Preparation:15min  ›  Cook:15min  ›  Ready in:30min

    1. Mix all the ingredients in a bowl.
    2. Spoon tablespoons of mixture into a greased muffin tin.
    3. Bake at 180 degrees C for 15 to 20 minutes, or until cooked through when skewered.
    4. Rest for five minutes, then place on a rack to cool.
    5. If desired, you can ice.
