Gorgonzola Stuffed Mushrooms with Barbecued Onions

    Mushrooms are stuffed with Gorgonzola and topped with barbecued onion slices to make a stunning entree or side dish for any barbecue.

    Serves: 8 

    • 500g fresh mushrooms, stems removed
    • 250g Gorgonzola
    • 3 medium onions, sliced into rings
    • 4 tablespoons olive oil

    Preparation:20min  ›  Cook:5min  ›  Ready in:25min 

    1. Preheat barbecue for high heat, and lightly oil cooking grate. Fill mushroom caps with crumbled blue cheese.
    2. Place onion slices and mushrooms, cheese side up, onto the prepared grate. Turn onions over frequently until tender. Do not turn mushrooms over. Cook until blue cheese has melted, and mushrooms are tender. Remove mushrooms to a serving plate, and top with grilled onions.

    Fantastic BBQ recipe! I marinated both the onions and mushrooms in italian dressing which gave them an awesome flavour. I took the onion slices and put toothpicks through them as to hold together the rings so they wouldn't get lost in the grill! Wasn't 100% sure on the presentation, BUT SO GOOD.
