    This is a tasty pineapple based pudding recipe that is like a bread and butter pudding with eggs, milk and breadcrumbs. Serve with cream or custard.

    Ingredients
    Serves: 4 

    • 3 eggs, whisked
    • 125g butter, softened
    • 1 cup (220g) white sugar
    • 1 (550g) tin crushed pineapple with juice
    • 1/2 cup (125ml) milk
    • 4 cups soft bread cubes
    • 1/4 teaspoon vanilla essence

    Directions
    Preparation:15min  ›  Cook:45min  ›  Ready in:1hour 

    1. Preheat oven to 190 degrees C.
    2. In a mixing bowl, cream together butter and sugar.
    3. Add eggs, milk, pineapple and juice, bread cubes and vanilla. Mix together.
    4. Bake in a 2 litre casserole dish for 45 minutes.
