Tender Slow Cooked Roast Chicken

This is so easy to make, and tastes wonderful. Be careful not to over cook the chicken. This is also just as tasty cold the next day in sandwiches.

Serves: 4 

  • 1/2 large onion
  • whole chicken, size 16
  • head of garlic, peeled whole cloves
  • paprika, to season

Preparation:10min  ›  Cook:8hours  ›  Ready in:8hours10min 

  1. Peel the onion and cut in half.
  2. Stuff chicken with onion and garlic cloves. Sprinkle the top of chicken with paprika.
  3. Place in large slow cooker then cook on High for 5-8 hours or until chicken is no longer pink and the juices run clear
  4. The juices left at the bottom of the slow cooker pan can be used to make a delicious gravy, or chicken stock.

Altered ingredient amounts. Made my stuffing with garlic, onion, nuts, raisins, one slice of wholemeal bread + fresh sage. I also added in some potatoes, carrots and butternut pumpkin when there was 2 hours to go. What a fab dinner in one pot. Also put it on the timer + ready when you walk in the door... yum. - 29 Sep 2009
