Christmas Plum Pudding Cheese Cake

    This is so nice for us that live down under. Who wants HOT Plum Pudding when it's so hot here?! This is special. Just for us folk that still want xmas pud, without heating the house up. Everyone loves it and asks for the recipe so often I thought I would share it with all of you. Enjoy!!

    Serves: 10 

    • Base
    • 2 cups plain biscuit crumbs
    • 1Tbls cocoa
    • 125g melted butter
    • ¼ tsp nutmeg
    • ¼ tsp cinnamon
    • Filling
    • 500g cream cheese softened
    • 3/4 cup sugar
    • 3 eggs
    • 1 &1/3 cup mixed fruit
    • 1 tsp rum or brandy essence, or r 1 Tbsp of the real stuff

    Preparation:30min  ›  Cook:1hour  ›  Ready in:1hour30min 

    1. Combine base ingredients and press into 20cm springform tin. Refrigerate while making filling.
    2. Beat cream cheese and sugar till smooth.
    3. Add the eggs, one at a time; stir in fruit and essence/spirits.
    4. Pour into crust.
    5. Bake 160 degrees C for 1hr. (Not fan-forced) Or until firm.
    6. Cool with oven door ajar, then refrigerate overnight.
    7. Top with whipped cream, strawberries and kiwi fruit.

    I came over to WA last Xmas and were at Clare's place for the evening scoff. She made this cheese cake Yum!! and as I am now over here again I won't to let all of you know this is to die for. Sorry I am using here compt. and her site. I asked her for the recipie, she just said look it up on my All recipes saved recipe's Box. Well now I have it printed out to take back to England with me .
