    This is a gorgeous summery salad with the bright and strong flavours of spinach, fresh blackberries, crumbled feta cheese and spring onion.

    Serves: 8 

    • 500g baby leaf spinach leaves, rinsed and dried
    • 1 punnet of fresh blackberries
    • 200g feta cheese, crumbled
    • 1 punnet cherry tomatoes, halved
    • 1 spring onion, sliced
    • 4 tablespoons finely chopped walnuts (optional)

    1. In a large bowl, toss together baby spinach leaves, blackberries, feta cheese, cherry tomatoes, spring onion and walnuts.

    Used different ingredients. We enjoyed this. As an experiment we also tried red raspberries, strawberries and also good. One note; add rest of salad things and toss and add berries last so they won't crumble. Thanks for sharing. - 29 Sep 2008


    Very unique salad - nice combination of flavours and colours. Used almonds instead of walnuts and served with a balsamic dressing. Next time I will probably mix some romaine lettuce with the spinach, but I will definitely be making this again! - 29 Sep 2008
