Coconut Lamb Satay Skewers

    Tasty starter or serve with rice for a full meal! I use meat from lamb chops but you can use any lamb meat. The prep time includes marinating time.

    Serves: 4 

    • 4 lamb leg chops
    • 1 small onion
    • 1 garlic clove
    • 1 tablespoon tamarind sauce
    • 1 tablespoon soy sauce
    • 1 tablespoon vinegar
    • 1 tablespoon sambal oelek (or chilli paste)
    • 4 tablespoons desiccated coconut
    • 1 teaspoon sesame oil

    1. Remove fat and bones from lamb chops and cut into 2cm cubes.
    2. Combine lamb with chopped onion, garlic, tamarind sauce, soy sauce, vinegar, sambal oelek and coconut. Marinate for 2 hours or refrigerate overnight (or leave for as little or long as you like!)
    3. Thread onto skewers, brush with sesame oil and cook under a pre-heated grill.
