Walnut Coconut Slice

    This is the kind of slice you remember from your childhood! A topping of coconut and walnut caramel is baked over a coconut base. Easy and delicious.

    Serves: 6 

    • Base
    • 1/2 cup self-raising flour
    • 1/4 cup sugar
    • 1/2 cup coconut
    • 60g butter or margarine
    • Topping
    • 2 eggs
    • 1/2 teaspoon vanilla
    • 1 cup coconut
    • 90g walnut pieces
    • 1 1/2 cups brown sugar lightly packed
    • 1/2 teaspoon baking powder

    Preparation:10min  ›  Cook:35min  ›  Ready in:45min 

    1. To make the base: sift flour into bowl. Add sugar and coconut and mix well. Melt butter over low heat and add to dry ingredients. Mix well. Press into 28cm x 18cm baking tray. Bake in moderate oven 10 minutes.
    2. To make the topping; Lightly beat eggs, add vanilla and coconut, chopped walnuts, brown sugar and baking powder. Mix well. Spread over partly cooked base and bake further 25 minutes or until topping is cooked. Cut into squares and cool in tin.

    Very fast and easy to make, fantastic when you have a craving for something sweet. Next time I make it, I will add less sugar as both my husband and I found it a bit too sweet. But the texture is really lovely  -  12 Mar 2013

    didnt work...the topping wasnt right, it had an overcooked crust with runny insides..maybe there should be flour in the topping?  -  07 Jul 2010  (Review from Allrecipes UK & Ireland)
