Chilli con Turkey

This isn't your usual chilli con carne. Black beans and turkey mince make for a delicious twist on the classic - you could substitute chicken for the turkey. This hearty meal is an easy - and healthy - way to feed a crowd, and also freezes well. Top with grated cheddar.

Ingredients
Serves: 6 

  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, crushed
  • 500g turkey mince
  • 3 (400g) tins black beans, undrained
  • 600g jar passata
  • 1 1/2 tablespoons chilli powder
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil leaves
  • 1 tablespoon red wine vinegar

Directions

  1. In a large heavy pot over medium heat, cook onion and garlic until onions are translucent. Add mince and cook, stirring, until meat is brown. Stir in remaining ingredients. Reduce heat to low, cover and simmer 60 minutes or more, until flavours are well blended.

Tip:

Black turtle beans, or simply 'black beans' for short, are especially common in Latin American cuisine. High in fibre and packed with nutrients, they're a healthy addition to any dish. If you can't find tinned black beans, use kidney beans.

Something else. This was delicious and EASY. I used 625g of turkey mince. I, too, increased the crushed tomatoes to 800g., added 1/2 T. cumin and some jalepeno and chipotle chillis. I cooked the onion, garlic and turkey in a saute pan, then transferred the mixture to a crockpot (so I didn't have to tend to it) and added the other ingredients. It cooked on high for an hour and a half and was ready to eat. - 29 Sep 2008

Something else. Very good! Even better if you simmer the chilli for over an hour. I used a bit of olive oil when cooking the onions and garlic. - 29 Sep 2008

Used different ingredients. This is a great base recipe for our taste. As any good cook knows, you take a basic recipe and adapt it to the seasonings you like or love. Ground turkey is bland so I also added the cumin--about 2 tablespoons as we LOVE the flavour, and used ground oregano--about 2 teaspoons to a pound of raw turkey. If you use ground turkey breast it may be necessary to add 1-2 T. oil to brown it if to dry. I love to simmer meat and seasonings in a bit of fatless chicken stock until tender then add the rest and simmer for 10+ minutes. Enjoy! - 29 Sep 2008
