    This is the perfect baked potato soup recipe that includes all the flavours you need including, onion, sour cream, cheese and bacon.

    Serves: 12 

    • 9 potatoes
    • 170g butter
    • 2/3 cup (85g) plain flour
    • 1 1/2 litres milk
    • 1/2 tablespoon salt
    • 1 teaspoon ground black pepper
    • 4 rashers of bacon, cooked and chopped, divided
    • 4 spring onions, chopped
    • 300g grated Cheddar cheese
    • 250g sour cream

    1. Prick potatoes with a fork and cook in the microwave, 3 or 4 at a time then scoop out the flesh (while the others are cooking).
    2. In a large saucepan over medium heat, melt butter. Stir in flour and cook about a minute. Whisk in milk, a little at a time, stirring constantly until thickened. Stir in potatoes, salt, pepper, half the bacon, half the spring onions and most of the cheese (reserve enough for serving). Cook until thoroughly heated.
    3. Stir in sour cream and heat through. Serve topped with remaining bacon, onions and cheese.
