Beef and Vegetable Curry Puffs

    These are great for serving at get-togethers or just as a snack. Omit beef for a vegetarian dish. Mine tend to look a little "rough around the edges", but at least they then look homemade, rather than store bought!

    Serves: 12 

    • 300g cubed lean beef
    • 1 carrot, diced finely
    • 1 zucchini, dined finely
    • 1/2 cup frozen peas
    • 1 small brown onion, diced finely
    • 1 clove garlic, crushed
    • 400ml can coconut cream
    • 2 tbsp Masaman curry paste
    • 3 sheets frozen puff pastry, thawed and cut into quarters (squares)

    1. Preheat oven to 180 C.
    2. Brown beef and onion in frypan.
    3. Once browned, and remaining curry ingredients and cook on low for around half an hour (or longer depending on how soft you like your veggies).
    4. Remove from heat and allow to cool for a few minutes. Spoon mixture into the centre of each square of puff pastry. Fold squares diagonally, and seal by pressing the edges down with a fork. Place on a baking tray in the centre of the oven and cook for 20-25 mins, or until golden.
