This Indian dish combines fresh spinach and ricotta in a creamy curry. Use paneer if it's easy to find. It is absolutely wonderful with basmati rice or naan.

This is a tasty and quick side dish. The cooking time is just a guideline, feel free to cook this until the green beans are to your liking.

This is a simple and easy to toss together recipe using cauliflower. Serve this dish with Indian breads such as thin rotis or naans - even a pita bread will do! Garnish with coriander if you'd like. Asofoetida can be found in some grocery stores, but will most likely be found in a specialist Indian grocery store, it is often called 'hing'.

As weird as most people find this soup sounding, there is a resounding response. Everyone LOVES it. Also, it may be hard to find hominy, which is a form of corn maize, here in Australia. My solution is to replace it with a white bean.

This is a beautiful dish that's always a hit! This is a layered antipasto plate, so you can cut it in square slices neatly and find all the ingredients in every bite. Add veggies to your liking. Serve with fresh ciabatta or crusty bread. Enjoy!
