This started off to be a cake but ended up as a delicious old fashioned pudding that you could eat cold or hot. Tastes even better 24 hours later. Old brown bananas go best in this pudding and you can substitute brandy or milk for the rum.

What to do with those almost dead bananas? Make a pudding. This is divine. Banana cake and a scrumptious sauce. How much can YOU eat?

It may seem odd to have a banana and avocado in the same recipe, but the banana completely hides any taste of the avocado. The avocado is there simply for texture and nutritional value. Even my kids love this recipe! You can use any unsweetened milk in this recipe - almond, soy, rice or coconut - and for a bit of crunch use raw cocoa nibs instead of the cocoa powder.

I ask about for new cake recipes - this was one my Gran thought I deserved to have. It's turned upside down when removed from the oven. It is delicious served with cream or custard.

Because you can't get instant banana pudding in Australia, I have adapted an American recipe. So open some packets, throw in some bananas and you have the yummiest banana cake ever. this is without doubt the nicest banana cake I have ever made.

Sago is originally from South East Asia. Sago has a very unique look and resembles tiny pearls. If you cant get it at your supermarket you can get it at Asian supermarkets. This is an easy recipe, hope you enjoy.
