I first made this boiled fruitcake recipe for Christmas but now I use it all year round. I have made errors and forgot ingredients and it is very forgiving, I haven't made one I can't eat yet.
This recipe makes enough for 24 luxurious mini fruit cakes. They really do make a thoughtful Christmas gift for neighbours, work colleagues or teachers, or as part of a gift basket. You can decorate them differently by making one for each family member which makes it a lot more fun.
This is a lovely cake with cherries and raisins added for those of you who don't want to go to the trouble of making fruit cakes. It’s best if you can wait several days before eating to allow the flavours to develop. This cake also freezes well.
This recipe was given to me by my mother. When made it doesn't last long. My hubby loves it and it is delicious.
