Although suitable as a main I often use this as a side dish. The three types of mushrooms, pioppino, black and straw, are stir fried with tofu then joined by oyster sauce.

Fresh herbs are sautéed with garlic in olive oil, then cooked with chickpeas, zucchini, mushrooms and tomatoes.
When my vegetarian friends come around I fall back to this dish which is always well received. You can make the day before then store in the fridge, I find this makes it hold together much better when serving.
