There are so many fruit options to put into a muffin including apple, banana, strawberry, blueberry, peach and apricot just to mention a few.
I love cooking anything so when asked by my gran kids to make some yummy muffins I came up with these so here is my recipe. Hope you have as much success as me! I have put all ingredients down I used. Special note; do not over mix as it will break up the raspberries. You can also use fresh strawberries, I have used blueberries (frozen) which were fine! Enjoy.
These muffins are extra large and very delicious. I usually double the recipe. Add extra blueberries too, if you want!
When you are looking for a change from banana bread this is a wonderful recipe for banana muffins that is sure to please the fussiest eater.
This recipe is from a girl I met at Mothers Group who brought the muffins along to morning tea. My taste buds were struck down that day and I begged her for the recipe. The combination of bananas and chocolate in a muffin is a perfect match!. They freeze well and I often include them in my kids lunch box as they defrost in 20 minutes. Depending on the size of the bananas, you may get more than 12 muffins - but thats never a bad thing.
This is a great healthy substitute for fattier counterparts. You can use plain flour instead of wholemeal if desired. Other fruits can be substituted as well!
