Great low GI salads using sweet potatoes / kumara mixed with a range of other root vegetables or leafy salad greens.
On average, one medium sweet potato provides more than 100 per cent of the Recommended Dietary Intake (RDI) for vitamin A and about 80 per cent of the RDI for vitamin C.
Beetroot and sweet potato roasted with onion, garlic, salt and pepper. A really special but easy side dish for a roast or even just as a warm salad with haloumi.
This salad is so hearty it can be served as a light main. It has a really nice combination of roasted sweet potato, rocket, roasted red capsicum, olives and fetta. Dress with balsamic vinegar and olive oil.
Chicken and kumara (sweet potatoes) are served on a bed of vegetables with pineapple salsa on top. A riot of tastes!
Made this the other night because we wanted greens but didn’t want all the salad to be cold. Therefore the grilled tomatoes and steamed kumara. It all went together really well.
