Fried rice is a versatile recipe for a main or side. You can use the freshest ingredients or scour the fridge for your leftovers and it’ll still taste great.
Leftover brown rice is put to use in this chicken fried rice with capsicum and spring onions. Black pepper, paprika or dried parsley may be used to season after this is cooked.
Kimchi bokkeumbap, or kimchi fried rice, is a must for kimchi lovers. Made with a bit of beef mince and topped with a fried egg, it's meal in itself.
I prefer brown rice in stir fries for its nutty flavour. Use whatever veggies you have on hand, like celery and capsicum.
Once you have made fried rice the first time, you'll realise how versatile it is. Use whatever leftover or seasonal vegetables you like.
This dish can also be made with leftover rice and whatever veggies you have in the fridge but this is my favourite version.
