This is my version of the increasingly popular Pumpkin Risotto. Its very creamy with the feta through it and totally mooreish. I played around with it for some time before I got it to this point. My whole family love this recipe and I get cheers from my kids when I tell them we are having it for dinner. I have only rated it a medium difficulty because of the constant stirring involved. it's not a "chuck it together and leave it" type meal.

One of my favourite things that I ate in the US was pumpkin bread. We would have it during the Halloween and Thanksgiving celebrations. My grandmother made a pumpkin roll-up cake out of this with sweet cream cheese filling. I use my bush pumpkins for this. I bake them and then puree.
In the past when I have made vegetarian burritos for meat-eaters, they've said that they "miss the meat"... At this point, I used to ask them why they didn't just marry meat if they loved it so much... but now I follow this recipe instead. And all is well. I actually enjoy this recipe with some extra chilli (besides what is in the taco sauce). Also, you can use sweet potato or kumara.
This is a delicious and easy pasta dish that's not too heavy. The sauce is creamy with a nice bite from the parmesan and lemon juice. Serve with a fresh salad.
I love pies (my favourite meal is pie and mashed potatoes!) but I don't like the fat content of the pastry so I came up with this simple but very delicious idea. Use as you would any ordinary pastry or for pasties. All measurements are approximate. If you don't like the hassle of peeling the butternut pumpkin you can split it in half, take out the seeds and roast in a hot oven until it's soft about 30 - 45 minutes.
