A simple alternative to potato salad. Instead of mayonnaise it uses a white wine vinegar vinaigrette. Red wine vinegar is good too.
This potato salad tastes a little lighter and brighter than a standard potato salad because of the addition of lemon juice.
This salad is so hearty it can be served as a light main. It has a really nice combination of roasted sweet potato, rocket, roasted red capsicum, olives and fetta. Dress with balsamic vinegar and olive oil.
The basics of this potato salad were first given to me by a friend and as I made it more often I kept changing it and adding more things to make it my own. There is a lot less preparation time as I use canned potatoes, but it still works well with fresh potatoes, which you would need to boil first of course!
