This delicious stew is inspired by my friend from Sierra Leone, West Africa. Many ingredients can be modified. This is kind of a 'whatever is handy now' recipe. You can use a whole roasting chicken cut into bite-sized pieces, or just breasts and thighs if you prefer. Other suggested additions are turnips, carrots and celery. This looks great served over white rice with a garnish of fresh chopped coriander, parsley or unsalted peanuts.

This is just a family recipe that I have changed slightly, the flavours are stronger. It is a simple dish with just simple ingredients but you will need a large pot to fit all the ingredients (can be a 1 pot dish if you wish). This dish is an overnight dish. Leaving it overnight in the fridge allows the excess oil/fat from oxtail to float to the top, therefore easily removing them.

This stew is traditionally for St. Patrick's Day but is also suited to more cooler weather. Either way, the mixture of the beef and Guinness is awesome! I usually add more beer than the recipe calls for and serve it with mashed potatoes.

This is a delicious recipe that I grew up on - a traditional Greek way to prepare lamb. Lamb and onion are browned in olive oil, then cooked with green beans in a tomato sauce, lightly seasoned with salt and pepper. You can use a cheaper cut of lamb for this. I've added my own touch with some mint.
