This Mexican-inspired chilli is sandwiched between layers of cheesy polenta and baked into a savoury vegetarian casserole. Extra chilli can be garnished with shredded cheese, chopped spring onions, a dollop of sour cream and a splash of Tabasco sauce and served with cornbread for an easy meal.

Black turtle beans can be hard to find in Australia, but if you can get them substitute them for the red kidney beans.

This fantastic chilli beans recipe has been honed over 15 years of cooking laziness - prepared in 5 minutes and aged to perfection in a slow cooker. Stir it every couple of hours (if you're in the house) to help fuse flavours and eliminate any pot-sticking. Perfect for use with nachos, tacos, dips etc. You can use a tin of lentils instead of the vegetarian mince.

There are tons of delicious spinach salad recipes out there. But this recipe holds a special place in my heart. We have been eating this in my family for years. My auntie contributed this spinach salad to a charity cook book, and we have all been sucking in the spinach with gratitude ever since. The original recipe contained fried bacon pieces. I substitute this for kidney beans, which is a fantastic alternative for vegetarians. You still get the protein, and also the splash of red colour.
