Easy Pumpkin Burrito
In the past when I have made vegetarian burritos for meat-eaters, they've said that they "miss the meat"... At this point, I used to ask them why they didn't just marry meat if they loved it so much... but now I follow this recipe instead. And all is well. I actually enjoy this recipe with some extra chilli (besides what is in the taco sauce). Also, you can use sweet potato or kumara.
Nachos
This is great football food or an easy Sunday night meal. Serve with sour cream, guacamole (see my other receipe 'Best Ever Guacamole') and corn chips.

Spinach and Red Kidney Bean Salad
There are tons of delicious spinach salad recipes out there. But this recipe holds a special place in my heart. We have been eating this in my family for years. My auntie contributed this spinach salad to a charity cook book, and we have all been sucking in the spinach with gratitude ever since. The original recipe contained fried bacon pieces. I substitute this for kidney beans, which is a fantastic alternative for vegetarians. You still get the protein, and also the splash of red colour.

Quick and Easy Chilli Beans

A simple chilli beans recipe that uses both lentils and kidney beans. It's great as a base for tacos or nachos or just served as a dip with rice or bread. Full of protein, iron and fiber, very important for a healthy vegetarian diet. Sometimes I add a couple of chopped fresh tomatoes to cool it down.
