Cooked in a pressure cooker, red kidney beans are cooked with fennel seed and cayenne pepper. This is very good as is with rice or mixed with cubed ham. Use this quick soak method to cook any dry beans in the pressure cooker.

This Mexican-inspired chilli is sandwiched between layers of cheesy polenta and baked into a savoury vegetarian casserole. Extra chilli can be garnished with shredded cheese, chopped spring onions, a dollop of sour cream and a splash of Tabasco sauce and served with cornbread for an easy meal.

There are tons of delicious spinach salad recipes out there. But this recipe holds a special place in my heart. We have been eating this in my family for years. My auntie contributed this spinach salad to a charity cook book, and we have all been sucking in the spinach with gratitude ever since. The original recipe contained fried bacon pieces. I substitute this for kidney beans, which is a fantastic alternative for vegetarians. You still get the protein, and also the splash of red colour.
