I have given so many people this recipe - substitute any fruits for the apple and if you don't have time to pre-cook it - just slice it finely and then add a little more sugar if it is a "tart" fruit (rhubarb, granny smith apples, some types of stonefruit, etc). Quick, easy, and foolproof! Great to bake in the oven whilst the main course is cooking.

This is my favourite apple tart; buttery, rich and lemony- like a cross between crispy apple pie and Tarte Citron It is very simple and cheap to make and the great thing is, you can adjust the ingredients to suit your taste. It was named the 1x6 pie (1 apple, 1 lemon, 1 egg, 1 knob butter, 1 tablespoon of sugar, 1 pastry sheet) but I like more filling. The proportions of apples to eggs and butter should be preserved, otherwise the filling won't set. Buy the best butter puff pastry you can afford.

My Apple Streusel Cake
The easiest way to describe this cake is that it's similar to a butter cake with apple crumble on top. Admittedly it isn't my own recipe but I thought I should share it given the success it has been for me. My friends and family love it and I already have several orders for Christmas (as in: please make me one instead of buying me a present!) it was even such a hit with my partner that he refused to share the one I recently made.
